MESU

(Gram Flour Fudge)

Makes – 12 -15 pieces

 

Ingredients

Gram flour – 1 cup

Sugar – 1 ½ cup

Water – 1 cup

Ghee – 3 cups

Ghee – ½ tsp. (for greasing a Thali) 

Saffron – few strands

Cardamom powder – pinch

Pistachio (unsalted) – 2 nos.

Method

1.)    In a toap, melt the ghee. 

2.)    Add gram flour to the melted ghee to make a very thin batter.

3.)    In a separate container, make sugar syrup of 1 string consistency – (Heat water. Add sugar to it. Heat it till the sugar melts and the consistency becomes that of 1 string.)

4.)    Add the sugar syrup to the gram flour batter.

5.)    Over a low flame, cook this mixture. Stir continously till the mixture starts leaving the side of the toap. Add saffron.

6.)    Grease a thali with ghee and pour the mixture in the thali. Spread it evenly and garnish with chopped pistachio and cardamom powder. Allow it to set. When the Mesu sets, it will have small holes in it.

7.)    Cut into small pieces.

To serve

Mesu is a very heavy sweet and is usually served with  Besan / sev .Mesu is also the traditional sweet given during Panuma (pregnancy ceremony)
