CHANTARO – TIKHO

(Spicy Red Rice Flour Pancake)

Serves – 6

Ingredients

Red rice flour – 2 cups

Whole-wheat flour – ½ cup

Asafoetida – pinch

Green chillies – 3 – 4 nos.

Coriander leaves – 3 tblsp.

Ginger – ½” piece

Lemon – 1 no. (squeezed)

Oil – 2 tblsp.

Oil – for shallow frying (approx. ½ cup)

Salt – to taste

Method

1.)    Chop the coriander leaves and green chillies. Peel and chop the ginger finely.

2.)    In a toap, combine the red rice flour, whole-wheat flour, salt, asafoetida, chopped ginger, green chillies, coriander leaves, juice of 1 lemon and 2 tblsp.oil. Mix well. 

3.)    Add enough water to the above mixture to make a thick batter of pouring consistency.

4.)    Heat a tawa on a medium flame. When hot, fill up a kevai (round spoon) with the batter and pour it evenly on the tawa.

5.)    Add oil on the side of the spread out batter. This is to prevent it from sticking to the tawa. Cook on both the sides till the Chantaro is golden in colour.

6.)    Serve piping hot.

To serve

Tikho Chantaro is served for breakfast with Dharan ji Chutney.
