CHAPRI / GARAY CHOKAY JI ROTI

(Red Rice Flour Unleavened Bread)

Serves – 6

 

Ingredients

Red Rice flour – 2 cup

Whole Wheat Flour – ½ cup

Water – ½ cup

Ghee – for baking

Whole wheat flour – for dusting

Method

1.) In a paat, mix the red rice flour, whole-wheat flour and water to make a semi-soft dough.

2.) Cover the dough with a damp cloth for ½ hour.

3.) Divide the dough into 12 equal portions.

4.) Flatten out each portion. Dab a little ghee on 6 pieces of dough and place the balance pieces on the dabbed pieces. Flatten the pieces again to get 6 double layered pieces.  

5.) Sprinkle some whole-wheat flour on the chaklo. (This is done so that the Chapri does not stick to the belan, do not sprinkle a lot of whole-wheat  flour other wise the Chapri will turn out dry).

6.) On a medium flame, heat a tawa. When hot, place the rolled out dough on this. Cook till brown spots appear on the Chapri. Turn the Chapri and cook it on the other side.

7.) Remove the Chapri when done and dab a little bit ghee. Fold into half and again dab a little ghee. Serve piping hot.

To serve

Chapri, as a bread, is exclusive to Bhatia cuisine only. It is an alternate to Phulko and nearly all vegetables are eaten with it. It is served for lunch as well as dinner.
