(Instant Carrot & Green Chilli Pickle)



Carrots (large) – 2 nos.

Green Chillies – 10 nos.

Gram Flour – 1 tblsp.

Juice of 1 Lime

Oil – 1 tblsp.

Mustard seeds – ½ tsp.

Salt – to taste


1.)    Peel, wash and cut the carrots into thin long elongated strips.

2.)    Cut the green chillies into thin long strips.

3.)    In a pan, heat oil on a medium flame. When hot, add mustard seeds. Let it temper.

4.)    Add the carrot and green chilli strips, salt and cover the pan with a water filled thali.

5.)    When the carrots are tender, remove the water filled thali; add gram flour and lime juice. Mix well and allow the mixture to simmer for a couple of minutes.

6.)    When the gramflour is roasted, remove. Serve as required.

To serve

Gajari Mirchiyun can be serve hot, at room temperature or cold as an accompaniment to any savoury dish or with any of the meals.
