masala puri

(Muh~sal~aah Poo~ree)

(Spiced, Deep Fried Unleavened Bread)

Makes – 8 pieces

Ingredients -

Whole-wheat flour – 2 cups

Oil / Ghee – 2 – 3 tsp.

Turmeric powder – ½ tsp.

Cumin seeds – ½ tsp.

Red chilli powder – ½ tsp.

Salt – to taste

Oil / Ghee – for frying

Method -

1.)    In a paat, mix the whole-wheat flour with cumin seeds, red chilli powder, salt, turmeric powder and oil / ghee.

2.)    Add enough water to this mixture to make a firm dough.

3.)    Keep the dough covered with a damp cloth for ½ hour.

4.)    Divide the dough into 8 equal portions.

5.)    Flatten each portion and with a rolling pin, roll out each portion into a 4” diameter, using a little wheat flour to do so.

6.)    Heat the oil / ghee for frying in a Kadai. When hot, reduce the flame to low and add the Masala Puris, one at a time. Let the Masala Puris fry well, turning it occasionally.

7.)    Fry the Puris till they are golden brown in colour and crisp.

8.)    Remove and drain out the excess oil.

To serve -

MasalaPuri can be served plain or with pickle, curd, raita for breakfast. It can also be eaten as an accompaniment to the main course for Lunch.
