SALURA

(Suh~loo~raa)

(Spiced Dry Potato Vegetable)

Serves – 4

 

Ingredients

Potatoes (medium sized) – 4 nos.

Oil – 3 tblsp.

Green chillies – 3 nos.

Cumin seeds – ½ tsp.

Turmeric powder – ¼ tsp.

Chilli powder – ½ tsp.

Salt – to taste

Coriander leaves – 1 tblsp. (for garnish)

Method

1.)    Boil the potatoes. When done, peel off the skin and cut them into small pieces.

2.)    In a pan, heat the oil on a medium flame. When hot, add cumin seeds and chopped green chillies. Allow it to temper.

3.)    When the chillies start popping, add the boiled potato pieces. Add the remaining spices and mix well. Cook for a few minutes.( If the potatoes are not boiled at step 1, then add the raw potatoes after tempering and cover it with thali of water and let it cook, when tender then add the spices)

4.)    Before removing from the flame, add salt and mix thoroughly. Garnish with finely chopped coriander leaves.

To serve

Salura can be eaten hot or at room temeperature (after they have cooled down). Salura is a Classic Bhatia specialty, which can be eaten for breakfast with Puri; for lunch as a side dish to the main course or for dinner with Phulko.
