(Tu~rai~an Joe Sah~ag – Tur~ay~low)

(Fried Ridge Gourd / Zucchini Vegetable)

Serves – 4



Ridge Gourd – 1 kg.

Mustard seeds – ½ tsp.

Oil – ½ tblsp.

Asafoetida – pinch

Salt – to taste

Green Chillies – 2 – 3 nos.

Coriander powder – 1 tsp.

Turmeric powder – ¼ tsp.

Juice of 1 lime or Raw mango powder – ½ tsp.

Coriander leaves – 1 tblsp. (for garnish)


1.)    Peel, wash and cut the ridge gourd in finger like elongated shapes.

2.)    In a pan, heat oil on a medium flame. When hot, add mustard seeds. Allow them to temper. When the mustard seeds start popping, add asafoetida and chopped green chillies.

3.)    Stir for half a minute. Add the chopped gourd, salt and turmeric powder. Mix well and reduce the heat to a low flame. Cover the pan with a rekabi and stir it at regular intervals.

4.)    When the gourd becomes tender, add coriander powder and raw mango powder. Mix thoroughly and let the vegtable simmer for a few minutes.

5.)    Serve hot garnished with chopped coriander leaves.

Toorain jo Taraylo Saag is served with Phulko for Dinner.
