(Rice & Split Green Gram)

Serves – 4

 

Ingredients

Rice – 1 cup

Split green gram – 1 cup

Ghee – ½ tblsp.

Salt – to taste

Method

1.)    Clean and wash the rice and the split green gram

2.)    In a toap, soak the rice and the split green gram in water together for 1 hour before the start of preparation.

3.)    In the same water, keep the rice and split green gram for cooking on a medium flame. Add salt.

4.)    When the rice and the split green gram have cooked, remove the excess water (if any) and place the toap on a tawa. Add ghee and lightly mix it. Allow the rice and lentil mixture to simmer for 6 – 7 minutes.

5.)    Serve piping hot.

Chef’s tip

If the water in the rice and split green gram is retained after boiling and the mixture is pureed, then it becomes Naram Khichadi.

To serve

Ufri Khichadi is served for Lunch with Tamatay jo Saag or with Dahi ji kadi  or with Sacho Saag.
