AAMI JO SAAG

(aa~mee jo sah~ag)

(Raw Mango Vegetable)

Ingredients

Raw Mango(aami) – 1 cup

Sugar – 11/4 cup

Cumin Seeds – 1 tsp.

Green chillies -  4-5 (chopped)

Salt – according to taste

Turmeric Powder – 1 tsp.

Red Chilli Powder- 1 tsp.

Oil – 1 tbsp.

Method

1.) Peel the raw mangoes and cut it in thin  long strips.

2.) In a kadai, take oil and add cumin seeds. When the seeds start spluttering add the chopped green chillies.

3.) Add the chopped raw mango, salt and turmeric powder and mix it well.

4.) Cover it with a thali and let it cook. Stir it  at regular intervals.

5.) When the raw mangoes are almost done(check to see if they are soft), put the sugar and mix it properly.

6.)Let the sugar dissolve , stir it  at regular intervals and cook  till the consistency becomes a little thick.

To Serve

Aami Jo Saag can be served at room temperature with Roat (for Surj Lotaro), with Puri or as an accompaniment with any meal.

Chef’s Tip

The quantity of sugar can be adjusted as per the sourness of the raw mango and individual preference.
