Roasted Tomatoes

Tomatoes – 3 nos.
Oil – 2 tblsp.
Ginger – ½” piece
Green chillies – 2 nos.
Coriander powder – ½ tsp.
Mango powder – ½ tsp.
Red chilli powder – ½ tsp.
Salt – to taste
Pepper powder – ¼ tsp.
Coriander leaves – 1 tblsp.


1. Slice the tomatoes. Cut the ginger into juliennes(fine strips) and finely chop the green chillies.

2. In a pan, heat oil on a medium flame. When hot, add the tomato slices. Add ginger, chopped green chillies and all the spices.

3. Cook on both the sides for a few minutes till the tomato slices are roasted well and coated with the spice mix.

4. Serve piping hot garnished with fresh coriander leaves.

To serve
Sekela Tamata makes an excellent accompaniment. It is served hot with Koki or with Missi Roti.
