(Roasted Wheat Crust – Sweet)


Crust Wheat – 1 cup
Ghee – 1 tblsp.
Sugar – 1 ½ cup
Tejano  (Milk Masala) – 1 tsp.
Water – 3 cups – 4 cups (depending on the cooking time)


  1. In a deep pan, heat the ghee on a medium flame. When the ghee melts, add the crust wheat.
  2. Roast the crust wheat in ghee for a few minutes till it turns light brown in colour.
  3. Add water and reduce the heat to a low flame. Let the broken wheat to cook. Add more water in case if the crust wheat is not cooked or if the water has evaporated. The water has to be added gradually.
  4. When the broken wheat is cooked, add sugar and ½ tsp. of tejano. The sugar will caramelize on the being cooked and will be absorbed by the crust wheat. The colour will also change from light brown to chocolate brown. Bhaat is to be cooked till the broken wheat absorbs the caramelized sugar.
  5.  Serve piping hot garnished with the remaining 1/2 tsp. of Tejano.

To Serve

Breakfast – Bhaat is served with roasted Pappad.
Lunch / Dinner – Bhaat can be served as an accompaniment / sweet dish.
Bhaat served with Saagbiri  is a very popular combination for both dinner as well as a heavy snack.
