Ingredients

– Bitter gourd (karela)– 3 nos.

– Green gram lentil (moong dal)– 3 tbsp.

– Oil (for tempering) – 2 tbsp.

– Oil – for frying

– Salt (for applying on gourd) – 3 tbsp.

– Salt – to taste

– Green chillies – 3 nos. (chopped)

– Asafoetida – a pinch

– Turmeric powder – ¼ tsp.

– Coriander powder – ½ tsp.

– Red chilli powder – ½ tsp.

– Water – as required


Method 

Step 1: Preparing the Lentil

– Wash and soak the green gram lentil in water for at least 1 hour prior to cooking.


Step 2: Preparing the Bitter Gourd

– Wash and slice the bitter gourd into round pieces.

– Apply salt generously to the slices and keep aside for at least 30 minutes.

(This helps reduce the natural bitterness.)

– After resting, lightly squeeze out excess moisture (optional).


Step 3: Frying the Bitter Gourd

– Heat oil in a pan and fry the bitter gourd slices until lightly crisp.

– Remove and keep aside.


Step 4: Cooking the Lentil Base

– In a deep vessel (toap), heat oil for tempering on a medium flame.

– Add chopped green chillies and asafoetida.

– Allow the mixture to temper until the chillies begin to pop.

– Add the soaked lentil along with its soaking water and salt.

– Cook on a medium flame until the lentil becomes tender.


Step 5: Combining & Final Cooking

– Add turmeric powder, coriander powder, and red chilli powder.

– Add the fried bitter gourd slices.

– Mix gently and cook for a few minutes so the flavours combine well.


Step 6: Final Step

– Adjust seasoning if required.

– Serve hot.
