Chef’s Tips
– Cooking on low heat helps reduce the natural bitterness of cluster beans.
– Ensure the gram flour is well-cooked to avoid a raw taste.
– A pinch of sugar helps balance flavours beautifully.
Variations

– Traditional Potato Addition : A common variation includes adding small cubes of boiled
potatoes along with the cluster beans. The potatoes absorb the spices beautifully and
add softness, balancing the slight bitterness of the guvar.
– Spicier Version : For those who prefer a more robust flavour, additional green chillies
or a pinch of coarsely crushed black pepper may be incorporated.
– Tangier Variation : Instead of raw mango powder, a small amount of tamarind pulp
or fresh lemon juice can be used to provide a different style of tanginess.
– Dry vs Semi-Dry Preparation : While traditionally prepared as a dry vegetable dish,
a small amount of water can be retained during cooking to create a semi-dry version
that pairs particularly well with rice.
– Festival Version : For special family meals, the quantity of gram flour may be increased
slightly and finished with a spoonful of ghee, resulting in a richer and more indulgent
variation.
