KHAND TIKKI
(Sugar Ball Candy)
Ingredients
Refined Flour – 1 cup
Sugar (ground) – ½ cup
Cardamom pods – 3 nos. (seeds only)
Sesame seeds – ¼ tsp.
Ghee – ¼ cup
Ghee – for frying
Method
Soak the sugar in some water. The water should be just about enough to immerse the sugar. Heat the mixture on a medium flame. Keep stirring continuously till the sugar melts and sugar syrup of 1 string consistency is formed. Keep aside.
Sieve the refined flour, add the seeds of cardamom pods, sesame seeds and ¼ cup ghee. Mix well.
Add the sugar syrup and knead to form a hard dough. When the dough is formed, sprinkle a couple of drops of water and keep the dough aside for ½ hour.
Divide the dough into 6 equal portions and give them a round shape.
Heat the ghee for frying on a medium flame. When hot, lower the flame and deep-fry the Tikkis till they are golden brown in colour.
Remove the Tikkis on an absorbent paper. Allow them to cool and serve.
