Ingredients
Main Ingredients
– Refined flour – 1 cup
– Jaggery – ½ cup
– Water – ½ cup
– Ghee – ¼ cup
– Oil – for frying

– Sesame seeds (Till seeds) – 1 tbsp.
Method
Step 1: Prepare the Jaggery Syrup

– In a toap or deep pan, heat water on a medium flame.
– Add jaggery pieces and stir occasionally until completely dissolved and
blended with the water.
– Cook until the mixture reaches a thick syrup-like consistency.
– Remove from heat and keep aside.
Step 2: Prepare the Dough


– In a separate bowl, combine refined flour, sesame seeds, and ghee.
– Mix thoroughly.
– Gradually add the prepared jaggery syrup and knead into a firm dough.
– If required, sprinkle a few drops of water and knead again.
– Allow the dough to rest for approximately 30 minutes.
Step 3: Shape the Lolas
– Divide the dough into eight equal portions and shape into smooth round balls.
Step 4: Fry the Lolas
– Heat oil in a kadai on a medium flame.
– Reduce the flame slightly and fry the Lolas until they turn light golden or
creamish in colour.
– Remove and drain excess oil on absorbent paper.
– Allow to cool slightly before serving.
To Serve
Lolas are traditionally served for breakfast with roasted Pappad.
They are also commonly prepared during Thado and festive family gatherings.

– For a richer flavour, strain the jaggery syrup before adding it to the dough to
remove any impurities.
– Fry on a low to medium flame to ensure even cooking and a crisp texture.
