MARRIRAY JO SAAG – MITHO / BHAJI KARELO
(Green Amarnath Vegetable – Sweet / Green Amarnath with Bitter Gourd)
Marriro Bhaji – 1 medium sized bunch
Bitter Gourd – 2 nos. (medium sized)
Ghee – 1 tblsp.
Oil – for frying
Split Green gram – 100 gms. or
Brinjal (medium sized) – 1 no.
Asafoetida – pinch
Salt – to taste
Soak the split green gram in water for 1 hour prior of the cooking.
Break the marriro leaves from its stem with your hand. Marriro should never be cut with the knife. Wash the leaves thoroughly.
Peel the bitter gourd. Cut it in roundlets and fry them in oil. Remove and keep aside.
In a kadai, heat ghee on a medium flame. When hot, add asafoetida.
When the asafoetida starts changing the colour, add the split green gram or the chopped brinjal with the marriro leaves.
Add ½ cup of water. Cover the kadai with a lid and let the vegetables cook.
When the brinjal is tender and the mariro leaves are cooked, mash the mixture slightly and add salt. Add the fried bitter gourd and mix well.
Simmer it for a couple of minutes and serve hot.
