(Bhatia Flatbread)

Whole wheat flour – 1 cup
Whole wheat flour – for sprinkling
Water – 1/3 cup
Ghee – for baking


  1. In a paat, mix the whole-wheat flour and water to make a semi-soft dough.
  2. Cover the dough with a damp cloth for ½ hour.
  3. Divide the dough into 4 equal portions.
  4. Flatten out each portion.
  5. Sprinkle some whole-wheat flour on the chaklo. (This is done so that the Phulko does not stick to the belan, do not sprinkle a lot of whole-wheat flour other wise the Phulko will turn out dry).
  6. On a medium flame, heat a tawa. When hot, place the rolled out dough on this. Cook till brown spots appear on the Phulko. Turn the Phulko and cook it on the other side.
  7. (optional) When done, transfer the Phulko with the chimpto on a direct flame. The Phulko will puff up.
  8. When it starts to puff, remove and dab a little bit ghee on the Phulko. Fold into half and again. Serve piping hot.

To serve

Phulko is the main Bhatia bread and nearly all vegetables are eaten with it. It is served for lunch as well as dinner.
