PURI, PAPPAD, BATATA, MIRCHI
(Fried Unleavened Bread, Poppadum, French Fries, Fried Chilli)
PURI (Fried Unleavened Bread)
Ingredients
Whole-wheat flour – 2 cups
Oil (for dough) – 2-3 tsp.
Salt – ¼ tsp.
Oil – for frying
Water – for dough
Method
Make a semi soft dough with whole wheat flour, oil, salt and water.
Divide into 6 equal portions.
Flatten each portion and roll with the rolling pin to about 2″ diameter.
Heat the oil for frying in a kadai. When fairly hot, add the Puris and press the Puris down lightly with a kanch. The pressing of the Puris will make it puff up.
Fry on both the sides till golden brown in color.
Drain and serve piping hot.
BATATA (Bhatia version of French Fries)
Ingredients
Potatoes (Large) – 3 nos.
Oil – for frying
Salt – ½ tsp.
Red chilli powder – ½ tsp.
Method
Peel the potatoes and cut them length wise into long pieces of 2″ thickness.
Heat the oil on a medium flame and when hot, fry the cut pieces of potatoes.
Fry the potatoes till they are golden brown in color. When done, remove and drain out the excess oil.
Sprinkle the Batata with salt and red chilli powder. Mix thoroughly.
Serve hot as an accompaniment.
TARAYLI MIRCHI (Fried Green Chilli)
Ingredients
Green chilli – 3 nos.
Oil – for Frying
Salt – pinch
Method
Slit the green chillies from the top to the base without cutting them.
Heat the oil on a medium flame and when hot fry the green chillies in them.
When fried (the colour becomes lighter), remove and sprinkle salt on it.
Serve hot as an accompaniment.
