TOORIAN JO SAAG – MITHO
(Zucchini Vegetable – Sweet)
Ridge Gourd / Zucchini – 250 gms.
Green gram Lentil – 2 tblsp.
Ghee – 2 tblsp.
Asafoetida – pinch
Salt – to taste
Soak the green gram lentil in water for a couple of hours before the start of preparation.
Cut the ridge gourd into small pieces.
In a pan, heat the ghee on a medium flame. When hot, add asafoetida and allow it to temper.
When the asafoetida starts changing the colour, add the green gram lentil and roast it for a few minutes.
Add the ridge gourd pieces and ½ cup water. Water will also emit from the gourd when it is cooked. Allow it to cook for some time.
When the gourd and the lentil become tender, lightly mash them with the back of a round spoon. Add salt and mix well.
Serve piping hot.
