Gram flour – 1 cup
Sugar – 1 ½ cup
Water – 1 cup
Ghee – 3 cups
Ghee – ½ tsp. (for greasing a Thali)
Saffron – few strands
Cardamom powder – pinch
Pistachio (unsalted) – 2 nos.
In a vessel, melt the ghee.
Add gram flour to the melted ghee to make a very thin batter.
In a separate container, make sugar syrup of 1 string consistency – (Heat water. Add sugar to it. Heat it till the sugar melts and the consistency becomes that of 1 string.)
Add the sugar syrup to the gram flour batter.
Over a low flame, cook this mixture. Stir continuously till the mixture starts leaving the side of the vessel. Add saffron.
Grease a thali with ghee and pour the mixture in the thali. Spread it evenly and garnish with chopped pistachio and cardamom powder. Allow it to set. When the Mesu sets, it will have small holes in it.
Cut into small pieces.
