CHUTNEY – MITHI
(Tangy Tamarind & Date Chutney)
Dates – 1 cup
Tamarind – ½ cup
Jaggery – ½ cup
Red Chilli Powder – 1 tsp.
Salt – ½ tsp.
Water – 2 cups
De-seed the dates.
In a toap, boil the water with dates, jaggery and tamarind. Mix well. Cook till the water reduces to half and the texture becomes thick and pulpy.
Allow the mixture to cool; Squeeze the pulp and then strain it.
Add the red chilli powder and salt. Mix well. Use as required.
