Ingredients
Main Ingredients
– Red rice flour – 2 cups
– Whole wheat flour – ½ cup
– Water – approx. ½ cup (to knead dough)

– Ghee – as required
– Whole wheat flour – for dusting
Method
Step 1: Prepare the Dough
– In a bowl (paat), combine red rice flour and whole wheat flour.
– Gradually add water and knead into a semi-soft dough.
– Cover with a damp cloth and allow to rest for 30 minutes.
Step 2: Portion the Dough
– Divide the dough into 12 equal portions.
– Flatten each portion gently using your palm.
Step 3: Create Layers
– Apply a small amount of ghee on 6 portions.
– Place the remaining 6 portions over the greased ones.
– Press and flatten again to form 6 double-layered portions.
Step 4: Roll the Chapri
– Lightly dust the rolling surface (chaklo) with whole wheat flour.
– Roll each portion into a flat disc.
– Use minimal flour to prevent dryness.
Step 5: Cook
– Heat a tawa on medium flame.
– Place the rolled chapri on the hot tawa.
– Cook until brown spots appear, then flip and cook the other side.
– Remove and apply a light layer of ghee.
Step 6: Finish & Serve
– Fold the chapri in half.
– Apply a little more ghee if desired.
– Serve hot.

Use minimal dusting flour while rolling—excess flour can make the chapri dry and affect
its soft texture.
