BHAAT PIYO KHEER
(Wheat Crust Porridge)
Wheat crust / White Burgol – 2 tbsp
Milk – 2 cups
Sugar – 2 tblsp
Cardamom (Seeds only) – 2 pcs.
Pistachio (Unsalted – Sliced) – 2 nos.
Almonds (Sliced) – 2 nos.
Ghee – 2 tblsp.
Saffron – 3 – 4 strands (optional)
Tejano (Milk Masala) – pinch (optional)
Melt the Ghee and roast the broken wheat on a slow flame till it is golden brown in colour.
Add milk and let it boil on a medium flame. When the broken wheat is cooked, add sugar, saffron and tejano.
Cook for a little while till the sugar dissolves and the Kheer is thick in consistency. When done, add cardamom seeds, sliced pistachio and almonds.
Serve the Kheer piping hot.
