BHAAT PIYO KHEER

(Wheat Crust Porridge)

Ingredients

Wheat crust / White Burgol – 2 tbsp
Milk – 2 cups
Sugar – 2 tblsp
Cardamom (Seeds only) – 2 pcs.
Pistachio (Unsalted – Sliced) – 2 nos.
Almonds (Sliced) – 2 nos.
Ghee – 2 tblsp.
Saffron – 3 – 4 strands (optional)
Tejano (Milk Masala) – pinch (optional)

Method

  1. Melt the Ghee and roast the broken wheat on a slow flame till it is golden brown in colour.
  2. Add milk and let it boil on a medium flame. When the broken wheat is cooked, add sugar, saffron and tejano.
  3. Cook for a little while till the sugar dissolves and the Kheer is thick in consistency. When done, add cardamom seeds, sliced pistachio and almonds.
  4. Serve the Kheer piping hot.

To serve

Bhaat piyo Kheer is usually served for Breakfast. It is mostly prepared in winter.
