(Spicy Deep Fried Unleavened Bread)
Whole-wheat flour – 2 cups
Oil / Ghee – 2 – 3 tsp.
Turmeric powder – ½ tsp.
Cumin seeds – ½ tsp.
Red chilli powder – ½ tsp.
Salt – to taste
Oil / Ghee – for frying
In a paat, mix the whole-wheat flour with cumin seeds, red chilli powder, salt, turmeric powder and oil / ghee.
Add enough water to this mixture to make a firm dough.
Keep the dough covered with a damp cloth for ½ hour.
Divide the dough into 8 equal portions.
Flatten each portion and with a rolling pin, roll out each portion into a 4” diameter, using a little wheat flour to do so.
Heat the oil / ghee for frying in a Kadai. When hot, reduce the flame to low and add the Masala Puris, one at a time. Let the Masala Puris fry well, turning it occasionally.
Fry the Puris till they are golden brown in colour and crisp.
Remove and drain out the excess oil.
