PUSAWARA

(Sprouted Whole Green Gram)

Ingredients

Whole Green Gram – 100 gms.
Oil – 2 tblsp.
Asafoetida – pinch
Green Chillies – 3 nos.
Ginger – ½” piece
Turmeric powder – ½ tsp.
Lime Juice – 1 tblsp.
Salt – to taste
Coriander Leaves – 1 tblsp. (for garnish)

Method

The preparation for Puswara starts one day before the actual cooking..
  1. Wash and soak the whole green gram for 6 – 7 hours in water.
  2. Remove them and tie the damp whole green gram in a muslin cloth. Leave it for 1 day till the green gram sprouts.
  3. In a pan, heat oil. When hot, add chopped green chillies, finely chopped ginger and asafoetida. Allow it to temper.
  4. Add the sprouted whole green gram lentil and a little water. Cook till the lentil is tender.
  5. When nearly done, add the remaining spices and cook for a few more minutes.
  6. Serve hot garnished with chopped coriander leaves.

To serve

Pusawara is served hot with Phulko.
