– Course: Main Course (Accompaniment)
– Preparation Time: 10 minutes
– Cooking Time: 20–25 minutes
– Serves: 3–4
Ingredients
– Musk melon – 1 no. (medium-sized)
– Cumin seeds – ½ tsp.
– Turmeric powder – ½ tsp.
– Green chillies – 3 nos.
– Dried red chillies (whole) – 2–3 nos.
– Sugar – ½ tsp.
– Oil – 1 tbsp.
– Salt – to taste
Method
Step 1: Preparation of the Musk Melon
– Wash the musk melon thoroughly.
– Peel off the outer skin using a sharp knife.
– Cut the melon into halves and remove all seeds and the soft fibrous centre.
– Chop the firm flesh into medium-sized cubes (not too small, as they soften during cooking).
Step 2: Tempering the Base
– Heat oil in a pan on a medium flame.
– Add cumin seeds and allow them to splutter and release their aroma.
– Add chopped green chillies and whole dried red chillies.
– Sauté for a few seconds until the chillies are slightly blistered.
Step 3: Cooking the Saag
– Add the chopped musk melon pieces to the pan.
– Sprinkle salt and turmeric powder over the mixture.
– Mix gently to coat the melon pieces evenly with the spices.
– Cover the pan with a lid or thali.
Step 4: Slow Cooking in Natural Juices
– Allow the melon to cook on a medium-to-low flame.
– The melon will begin to release its own water—no additional water is required.
– Stir occasionally to ensure even cooking and to prevent sticking at the bottom.
– Continue cooking until the melon becomes soft but still holds its shape.
Step 5: Final Flavouring & Finishing
– Once the melon is fully cooked, add sugar to balance the flavours.
– Mix gently and allow the dish to simmer for another 4–5 minutes.
– Check seasoning and adjust salt or sweetness if required.
– Remove from heat and let it rest briefly before serving.
