TOORIAN JO SAAG – TIKHO
(Zucchini Vegetable – Spiced)
Ridge Gourd – 250 gms.
Green gram lentil – 2 tblsp.
Ghee – 2 tblsp.
Asafoetida – pinch
Salt – to taste
Green Chillies – 3 nos.
Turmeric powder – ½ tsp.
Juice of 1 lime or Raw mango powder – ½ tsp.
Soak the green gram lentil in water for a couple of hours prior to the cooking.
Cut the ridge gourd into small pieces.
In a pan, heat the ghee on a medium flame. When hot, add asafoetida and chopped green chillies and let it temper.
Add the green gram lentil and roast it for a few minutes. Add the ridge gourd pieces and ½ cup water. (Water will also emit from the gourd when it is cooked). Allow it to cook for some time.
When the gourd and the lentil becomes tender, lightly mash it with the back of a round spoon. Add salt and raw mango powder or limejuice. Mix well. Cook for a few more minutes.
