Ingredients
Main Ingredients
– Ridge Gourd (Toorai) – 250 gms.
– Green Gram Lentil (Moong Dal) – 2 tbsp.
For Tempering & Seasoning
– Ghee – 2 tbsp.
– Asafoetida – pinch
– Green Chillies – 3 nos. (finely chopped)
– Turmeric Powder – ½ tsp.
– Raw Mango Powder – ½ tsp. or Juice of 1 Lime
– Salt – to taste
Method
Step 1: Soak the Lentil

– Soak the green gram lentil (moong dal) in water for a couple of hours prior to cooking.
Step 2: Prepare the Ridge Gourd

– Wash and peel the ridge gourd lightly.
– Cut into small pieces and keep aside.
Step 3: Temper the Spices

– In a pan, heat the ghee on a medium flame.
– When hot, add asafoetida and chopped green chillies. Allow it to temper.
Step 4: Cook the Lentil & Gourd
– Add the soaked green gram lentil and roast lightly for a few minutes.
– Add the ridge gourd pieces and about ½ cup water.
– Since ridge gourd naturally releases water during cooking, avoid adding excess water.
– Cover and cook till both the lentil and ridge gourd become tender.
Step 5: Finish the Saag
– Lightly mash the preparation using the back of a round spoon.
– The texture should remain rustic and not completely pureed.
– Add salt and raw mango powder or lime juice.
– Simmer for a few more minutes before serving hot.

Toorian jo Tikho Saag is traditionally served hot with

– For a richer flavour, the ridge gourd can be partially sautéed before adding the lentils.
