– Flattened rice (pava / poha) – 2 cups

– Potato (medium-sized) – 1 no. (peeled and diced)

– Mustard seeds – ¼ tsp.

– Curry leaves – 1 sprig

– Oil – 1 tbsp.

– Turmeric powder – ½ tsp.

– Salt – to taste

– Lemon juice – to taste

– Coriander leaves – 2–3 sprigs (finely chopped)


Method

Step 1: Prepare the Tempering

– Heat oil in a kadai on a medium flame.

– Add mustard seeds and curry leaves.

– Allow the mustard seeds to crackle.

Step 2: Cook the Potatoes

– Add chopped potatoes and green chillies.

– Sauté and cook until the potatoes are partially done.

Step 3: Prepare the Flattened Rice

– Meanwhile, rinse the flattened rice in a colander under running water.

– Drain well and gently mix in salt and turmeric powder.

– Set aside.

Step 4: Combine and Cook

– Once the potatoes are fully cooked, add the prepared flattened rice to the kadai.

– Mix gently and cook on a low flame for 3–5 minutes, stirring occasionally to ensure

even blending of flavours.

Step 5: Finish and Garnish

– Add lemon juice and mix well.

– Garnish with freshly chopped coriander leaves and serve hot.

– Do not over-soak the flattened rice—just a quick rinse is sufficient.

– Excess water can make the dish mushy instead of light and fluffy.
