Spicy Mix Vegetable Cutlet

Masalay Piyo Saag – 2 cups
Bread crumbs – 1 cup
Pav Bhaji Masala – ½ tsp.
Chaat Masala – ½ tsp.
Coriander leaves – 3 tblsp.
Salt – to taste
Oil – for shallow frying
1. In a vessal, place the Masalay piyo saag and mash it to form a paste. Add the masalas, salt and chopped coriander leaves.
2. Add the bread crumbs and mix thoroughly to ensure there is no lump formation. Form a semi- soft dough and divide into 6 portions.
3. With the hand, shape each portion into a disc of 2-3 inch diameter and 1 inch thickness.
4. Heat a pan; add 2 – 3 tblsp. of oil and shallow fry the cutlets on both the sides till they are golden brown in colour.
Masalay Piyo Saag ja cutlet are a good tea time snack and can be served with Dharan ji Chutney or Tomato Ketchup
