Vegetable Grill Toast

Saluna / Pan Gobi jo Saag /
Phool Gobi jo Saag / Tindoraan jo Saag – 1 cup
Tomato – 2 nos.
Butter – 20 gms.
Bread slices – 4 nos.
Cheese slices (optional) – 2 nos.

1. Butter all the slices of the bread.
2. Slice the tomatoes.
3. Place 2 spoonfuls of any left-over vegetables in the centre of the bread slice, spreading it evenly. Place 3 – 4 pieces of sliced tomato on the slice to ensure the entire slice is covered.
4. Place a slice of cheese (if used) and then place another slice of bread butter down on the slice with the filling. Add a dash of butter on top of the bread before it is grilled to give it a nice colour.
5. Grill the sandwich till the bread is golden brown in colour.

To serve
Serve hot with tomato ketchup or Dharan ji Chutney.

Bread slices can be replaced with Phulko. The same grilling technique can be used and after grilling, the Phulkas can be cut into quarters like quesadillas and served with ketchup, chutney or any dip.
